Traditional French Vinaigrette
Ingredients
- 4 Tablespoons olive oil extra virgin
- 2 or 3 Tablespoons wine vinegar (either white or red will work)
- 1 Teaspoon Dijon mustard
- salt
- pepper
Preparation
Mix mustard, vinegar, oil, salt and pepper in a bowl or jar. Use a whisk or shake until mixed. The mustard helps keep the oil and vinegar from separating.
Hint: You can vary the ratio of ingredients as you like, or even substitute another oil, such as avocado or walnut.
Feel free to mix in a small amount of fresh herbs, garlic, or shallots.
